Cocoa Almond Balls

These little cocoa nut balls are quick and easy, and such a nice, truly healthy addition to any holiday cookie tray.

Year-round these are ideal for chocoholics (like me). Nobody you serve these to needs to know that these are plant-based and sugar-free. And they require no-baking. Just add everything to your food processor for an instant, energy-packed treat.

These seem to disappear very quicky around my house, so you may want to hide a few in your lunchbox before they completely vanish. They freeze well too!

COCOA ALMOND BALLS

  • Servings: makes about 20 balls

1 cup rolled oats
3/4 cup pitted dates
1/2 cup toasted almonds
1/2 cup raw walnuts
2 tablespoons cocoa powder
1 1/4 teaspoon vanilla extract
1/4 teaspoon almond extract
1/4 teaspoon salt (optional)
3 to 4 tablespoons water

Instructions

Add oats, dates, almonds, and walnuts to the bowl of a large food processor. Process briefly, or pulse just a few times, until mixture is nicely mixed. Add remainder of ingredients. Process until mixture begins to stick together, and is well blended.

Scoop small portions of the mixture out with a spoon. Roll into one-inch balls and enjoy! Delicious chilled, too.
