Strawberry Chocolate Chip Oatmeal Cookies

I’m so excited to share these Strawberry Chocolate Chip Oatmeal Cookies with you! They’re a new favorite in our house, and so good! I’ve made them a few times for extended family too, and even non-vegans are liking these. They’re not only delicious, they’re easy too, and of course without a drop of any dairy, eggs, oil, flour, or refined sugar.

Since these are sweetened only with fruit and jam (made with 100% fruit), they make a great lunchbox treat, after-school snack…you name it.

I’m actually about to make another batch right now. What a great way to use ripe bananas! Hope you have a chance to try these cookies soon too. : )


STRAWBERRY CHOCOLATE CHIP OATMEAL COOKIES

  • Servings: about 20 cookies (2-inches each)

2 large ripe bananas, mashed
2 cups rolled oats
1 cup fresh strawberries, diced
1/2 cup fruit-sweetened strawberry jelly
1/3 cup almond butter
1/4 cup unsweetened chocolate chips
2 tablespoons ground flaxseed meal
1 1/2 teaspoons vanilla
dash of salt (optional)

Instructions

Preheat oven to 350 degrees.

In a large bowl, mix all ingredients until well combined.

Scoop about 2 tablespoons of batter for each cookie onto parchment- or silicone-lined baking sheet. These will not spread much, so press down evenly on mounds of batter to flatten a little bit.

Bake for 22 to 24 minutes, or until tops feel firm.

Remove from oven and place pan on cooling rack. Enjoy warm or at room temperature.
