Busy Morning Oatmeal

I usually batch-cook rolled oats to have enough for several servings, but when we visited our son a few months ago in NYC, we used his method for super speedy single-serve oats.

It made an impression on me, because it not only required so little effort, but made clean-up even easier than the prep. So I’ve been making my own version at home, and I promise this recipe is both simple and delicious (my two favorites).

I’m adding fruit and granola. Of course, the granola is optional, but adds a dash of sweetness and wonderful crunch. My recommendation is to make the homemade granola ahead of time, to have handy in the refrigerator. It lasts for weeks.

Experiment with any of your favorite fruits on top. If you’re using frozen instead of fresh, just add them to the bowl before microwaving, instead of after.

With granola and a little fruit on hand, all you’ll need on a busy morning is a microwave…and just about one minute! Enjoy.

BUSY MORNING OATMEAL

1/3 cup rolled oats
water
1/2 teaspoon cinnamon

ADD-OVERS
1 small banana
handful of fresh strawberries, rinsed, dried, sliced *
sprinkle of homemade granola
nondairy milk, to taste (optional)

Instructions

Pour dry oats into a microwave-safe ceramic bowl. Add enough water to the bowl to cover all of the oats. Cover lightly with paper towel or waxed paper. Microwave for 1 minute and 11 seconds, or until oats are at desired consistency (your timing may vary).

Stir in cinnamon. Top with fresh fruit and granola. Add milk, if desired. Enjoy.

* NOTE: Frozen berries work well too! Just add them to the bowl before microwaving, instead of after.
