Cranberry Apple Pear Baked Oatmeal

Happy New Year, friends! I’m hoping you had a fantastic holiday season!

This Cranberry Apple Pear Baked Oatmeal is a deliciously healthy way to start the New Year.

New beginnings are always exciting – and a healthy breakfast can help. Because this recipe makes enough for several servings, you can keep extras in the refrigerator, and warm as needed throughout the week. And that helps avoid decision fatigue and makes busy mornings that much easier.

CRANBERRY APPLE PEAR BAKED OATMEAL

1 ripe banana, mashed
2 cups nondairy milk
1 cup rolled oats
1 diced apple
1 diced pear
1/2 cup cranberries
1 tablespoon ground flaxseed meal
1 1/2 teaspoon cinnamon
1 teaspoon vanilla

Instructions

Preheat oven to 350 degrees. Have handy a 6-inch x 9-inch baking dish.

Mix all ingredients in a large mixing bowl. Pour into pan and bake uncovered for about 45 minutes, or until the edges turn golden brown (and the middle is set).

Serve warm. Top with fresh fruit (like sliced bananas or fresh berries) if desired. Cover and refrigerate leftovers to serve later in the week.
