Combining dates with peanut butter and chocolate is not a new idea, but it’s definitely having a moment. Sweet, chewy, gooey…one bite tells you everything you need to know.
These little bite-size Frozen Chocolate Peanut Butter Cups are my latest favorite. Perfectly scrumptious with no added refined sugar! And the crispy cereal along with the crunchy chocolate and peanut butter…well it’s heavenly.
I drizzle natural peanut butter over pitted sliced dates, and sprinkle with crispy quinoa cereal. Then it’s time for melted date-sweetened chocolate. I freeze the whole batch until ready to share.
I found these fit perfectly in the Souper Cube Freezer Trays for Cookie Dough! And because all Souper Cube Trays come with fitted protective covers, they last just as long as you’d like in the freezer. (If you don’t have these trays, use a mini-muffin pan instead, flash freeze, remove Peanut Butter Cups from muffin pan, and store in a covered freezer-safe container.)

FROZEN CHOCOLATE PEANUT BUTTER CUPS
20 Deglet Noor dates, pitted
1/4 cup natural peanut butter, warmed just enough to drizzle
1/3 cup crispy quinoa cereal (or puffed cereal of your choice)
1/2 cup date-sweetened chocolate chips
Instructions
Have ready 2 Souper Cube Freezer Trays for Cookie Dough or a silicone mini-muffin baking pan.
Gently fan open each date, and place both halves into one of the wells in the pan, sticky side down, and press down on the dates to adhere slightly.
Microwave peanut butter briefly, until warm. Drizzle, and then spread peanut butter evenly over opened dates. Sprinkle generously with crispy quinoa cereal (or puffed cereal of your choice).
Melt chocolate briefly in microwave. Stir well. Drizzle, and then spread chocolate over quinoa cereal.
Freeze for at least 30 minutes, and then enjoy straight from the freezer. Store extras in a covered freezer-safe container until ready to serve.
