Since it’s the holiday season, and time for celebrating, today I’m sharing this special recipe with you for decadent, gift-worthy fudge, made with pure, very simple ingredients.
This fudge is too good, really, and it’s as easy as can be!
And on top of being rich, sweet, and deliciously festive, this confection is chewy and crisp, thanks to the dried cherries and oven-toasted puffed cereal.
Mmmm…ridiculous.
CHOCOLATE CRISPY PEANUT BUTTER FUDGE WITH DRIED CHERRIES
1 1/2 cups puffed brown rice cereal
1 cup of semi-sweet vegan chocolate chips
1 cup natural peanut butter
1/3 cup dried cherries
1 tablespoon maple syrup
2 teaspoons vanilla extract
dash of salt (optional)
Instructions
Preheat oven to 350 degrees. Spread the rice cereal in a single layer on a small baking sheet, and oven-toast until golden and crispy, about 15 minutes. Remove from oven and allow to cool.
In a small saucepan, over medium low heat, melt chocolate chips with nut butter. Stir well until smooth and creamy. Remove from heat. Add remainder of the ingredients, including the cereal, and mix quickly until well combined.
Pour hot mixture out onto a small parchment-lined baking pan. Smooth out the top evenly with the back of a spoon. Allow to cool on the counter or chill in the refrigerator until firm enough to slice into small squares.
