Is anything more refreshing in July than a cold slice of watermelon? Probably not much, but Fresh Watermelon Sorbet would have to be in the running.
The texture of this fresh fruit sorbet is reminiscent of Italian Ice or granita, yet made with only fruit and no refined sugars. Plus, with only two plant-based ingredients, it could not be easier.
It’s simply wonderful on a hot summer day, and every refreshing bite is 100% frosty, fruity goodness.
FRESH WATERMELON SORBET
3 cups watermelon, cut into 1-inch chunks, seeds removed
2 fresh Medjool dates, pits removed
Instructions
Add watermelon and dates to a high-powered blender (like a Vitamix). Process until smooth. Carefully pour the mixture into the bowl of an automatic ice cream maker, and process according to manufacturer’s instructions. Enjoy immediately, or harden further in freezer for an hour or more.
