Purple Magic Baked Steel Cut Oats

These baked steel cut oats are my newest obsession.

Made with really simple ingredients, they’re just brimming with antioxidant power.

After one hour in the oven, the oats turn completely purple from the cherries and blueberries, and every serving is nice and sweet, without any added sugar.

Right from the oven you will be able to scoop it with a spoon. After the pan cools, you can cut the oats into squares. One batch is big enough for a few extra servings, sure to come in handy on the next few busy mornings. It’s a nutritious and truly delicious way to start the day, and I think it makes a pretty great afternoon snack, too.

PURPLE MAGIC BAKED STEEL CUT OATS

1 cup steel cut oats
1 quart unsweetened vanilla almond milk
1 cup frozen cherries
1 cup frozen blueberries
2 teaspoons cinnamon

To serve: extra fresh fruit, if desired

Instructions

Preheat oven to 350 degrees.

Mix all ingredients together in a 9″ x 13″ pan. Bake for 50 to 60 minutes, until oats are nice and tender. To serve, top with extra fresh fruit, if desired.

Cooled leftovers can be refrigerated in a covered container.
