Mmmm…a cold winter day and hot oatmeal. They go together like…well, like a cold winter day and hot oatmeal. Good stuff.
Here’s my newest favorite combo which can be prepared in all matter of ways, but the fastest is in the pressure cooker. Add sweet and sour cherries for gorgeous color.
DOUBLE CHERRY STEEL CUT OATS
1 cup steel cut oats
3 cups unsweetened vanilla almond milk
1 cup frozen tart cherries
1 cup frozen sweet cherries
2 teaspoons cinnamon
1 1/2 teaspoons vanilla
To serve: extra fresh fruit (like sliced bananas), if desired
Instructions
Combine all ingredients in an Electric Pressure Cooker (the ones made by Zavor won the 2017 Good Housekeeping Best of the Test Award.)
Lock lid in place, and seal valve. Select High Pressure with the timer set for 3 to 5 minutes.
After the cooking is complete, use either natural release (for thicker oatmeal), or the quick release method (for a chewier bite) to release remainder of the pressure. When valve drops, carefully remove lid.
Serve warm, with additional fresh fruit, if desired.
