Fruit Juice Popsicles

We love our Michigan summers and savor all of that long-awaited sunshine, but when gloriously warm turns hot and humid, it’s popsicle time.

I can’t seem to make these popsicles fast enough. They’re so refreshing on a summer day, and could not be easier.

Here’s my tip about popsicle molds, just in case you don’t already have them. My favorites are made by Lekué. I found them last year, and they’re so much fun to use, I bought 2 sets. They’re made of silicone so they flex to allow quick release of each popsicle, and stack individually, so you never have to disturb the others when you want only one. Plus the sticks are reusable, and every piece is easily rinsed clean in soapy water.

Now back to these delightful popsicles. Naturally tangy juices are perfect – you’re seeing orange and pomegranate above. And enjoy to your heart’s content…these have absolutely no added sugar.

FRUIT JUICE POPSICLES

  • Servings: makes approximately 8 popsicles

1 1/2 cups unsweetened 100% fruit juice (pomegranate, orange, etc.)

Instructions

Carefully pour juice into popsicle molds.

Do not overfill – they’ll expand slightly as they freeze.

Freeze until solid for several hours or overnight.
