Fresh Watermelon Juice

Watermelon juice has been a staple in my refrigerator throughout the summer, right next to my favorite herbal iced tea. It’s such a super refreshing way to stay hydrated!

We first enjoyed fresh watermelon juice on a short getaway this past spring to Punta Cana, and it was so restorative in the heat, that when we returned home, I couldn’t wait to duplicate it. In Punta Cana, I was adding a splash of watermelon juice to bottled water. Here at home, I’m adding it to herbal iced tea or sparkling water.

It’s deliciously sweet, so a little goes a long way, and it’s perfect for staying one step ahead of hydrating needs during these last days of summer.

Making watermelon juice could not be easier. You need only a blender. I like the pulp, but if you’re not a fan, you can pour the juice through a strainer.

Some people add a sweetener. Some add lime juice. For me, straight up is best, because it tastes like watermelon! And what could be better than that?

FRESH WATERMELON JUICE

  • Servings: makes about 1-quart

1 small watermelon (around 12-inches across)

Instructions

Rinse the outside of the watermelon, and dry well with a clean towel.

Using a large knife, slice watermelon into quarters. Remove the watermelon flesh from two quarters. Discard the rind. Add watermelon chunks to a blender (I use a Vitamix). Blend watermelon until pulverized.Ā 

(Cover and refrigerate the other two quarters for another use.)

Pour watermelon juice into a large pitcher or covered jar, and store in the refrigerator. Serve chilled. (I find this juice stays fresh refrigerated for 3 or 4 days.)
