We love these with everything from tofu scrambles to soups, stews, and flavorful curries.
Freshly grilled and served warm is the best, but I will say leftovers are delightful too. Just refrigerate in an air tight container for the next day, and microwave or lightly toast them as needed, when ready to serve.

EASY SWEET POTATO ROTI
1 3/4 cup oat flour
1 cup cooked sweet potato
1/2 teaspoon kosher salt
Instructions
Add all ingredients to a large food processor, and process (or pulse) just until a ball begins to form.
Turn out the dough onto a clean counter or board. Form dough together, knead a few times. Roll into a log and divide into 8 pieces. Shape each piece into a smooth ball, and then flatten, one at a time (either with the palm of your hand, or with a rolling pin) to create 4-inch circles (approximately).
Heat a nonstick griddle or frying pan over medium-high heat.
Place flattened circles of dough onto the dry hot pan. When dough becomes golden on the bottom after a minute or two, it’s time to flip. Allow the other side to cook for another minute or two, and remove from pan when toasty on the second side.
Repeat with other portions of dough.
Serve warm.
