These little beauties are deliciously addictive, and perfect for a busy afternoon with no time for baking.
Just add oats, peanut butter, and dried fruit to your food processor for an instant, energy-packed treat.
These always disappear quicky, so you just may want to stuff a few into your own lunchbox or gym bag before they completely vanish.
PEANUT BUTTER POWER BALLS
1 cup rolled oats
1/3 cup natural peanut butter
1/3 cup dried fruit (apricots, dates, cherries, etc.)
1/4 cup date syrup
2 tablespoons raw pecans
1/2 teaspoon cinnamon
pinch of salt (optional)
Instructions
Add all ingredients to the bowl of a food processor (I use a Cuisinart). Process briefly, or pulse just a few times, until mixture begins to stick together, and is somewhat (but not entirely) blended.
Scoop small portions of the mixture out with a spoon. Roll into one-inch balls and enjoy! Delicious chilled, too.
