Air-Fried Zucchini

Zucchini is one of my favorite vegetables these days. I’m especially loving zucchini with just about any savory breakfast, like scrambled tofu, beans over toast…you name it.

But air-fried, zucchini is good enough to eat all by itself – just as a snack!

AIR-FRIED ZUCCHINI

2 medium zucchini, rinsed
smoked salt

Optional: chile lime seasoning blend (like Trader Joe’s)

Instructions

Prepare zucchini into 1/2-inch cubes or quartered slices. Sprinkle very lightly with smoked salt, and (if desired) Chile Lime Seasoning Blend.

Layer zucchini in the basket of your Air Fryer, and bake until golden and tender in the center, tossing once or twice to cook evenly. With a Philips Digital Avance, it takes around 15 minutes at 400 degrees.

Carefully remove from air fryer, and enjoy.
