This easy recipe is so good that quite recently, I made it three times in one week. And it’s perfect for any spring holiday celebration, too.
I first demonstrated this recipe for a virtual VegMichigan cooking class. The theme was How to Eat Plant-Based on a Budget. When both my daughter and my husband enjoyed it so much after our class, I made more just to keep up with the demand here at home. It made a great dessert that evening, and lovely treat over the next few days.
This recipe checks lots of boxes. For sure, budget-friendly, but easy too. But most of all, it’s delicious…kind of a deconstructed fruit crisp, dripping with berries, and cozy with cinnamon and crispy granola.

EASY BAKED BERRIES AND PEARS

3 fresh pears
generous sprinkle of cinnamon
homemade granola
1 to 2 cups frozen berries, thawed
Instructions
Preheat oven to 350 degrees.
Wash pears. Slice each pear in half. Remove all of the cores. (A melon baller or a teaspoon works well for this.) Place pear halves in a shallow baking dish.
Bake uncovered for 20 minutes. Remove from oven. Into the center of each pear half, add cinnamon and a spoonful or two of granola. Spoon berries over the top. Bake for 10 minutes more.
Remove pan from oven. Top with more granola if desired, and serve warm or chilled.
